Fresh Squid with Soy and Lemon

Fresh squid is a taste sensation and has to be tried before being judged. Tender squid with a squeeze of lemon and balsamic or soy sauce is a great change to the norm.

Fresh Squid with Soy and Lemon

Serves: 4


  • 500g squid
  • Salt and pepper
  • 1 tbsp sunflower oil
  • 1 tbsp soy sauce
  • Juice of 1 lemon


  1. Preheat a griddle pan until smoking.
  2. Cut off the squid tentacles and set aside. Slice the body lengthways and gently score in diamonds with a sharp knife.
  3. In a small bowl, whisk the soy, lemon juice and oil together.
  4. Place the squid on to the hot griddle and cook for two minutes.
  5. Drizzle on the soy and oil, then turn and cook for a further two minutes.
  6. Turn occasionally for another minute, then serve piping hot.
