Grilled Aubergines with Mint

Traditionally a Middle Eastern dish, this is a great starter that goes well with the meatballs. Use a delicate oil and plenty of seasoning to bring out the flavour of the aubergine.

Grilled Aubergines with Mint

Prep Time: 5 mins
Cook Time: 10 mins
Serves: 4

Ingredients

  • 2 large fresh aubergines, sliced on the diagonal
  • Salt and black pepper
  • 1 lemon
  • Handful of mint, finely chopped
  • Light olive oil

Method

  1. Heat a griddle pan or frying pan on high with no oil.
  2. Slice the aubergines and drizzle plenty of oil over them, and season with salt and pepper.
  3. Lay the slices down on the griddle and cook until softened, then turn them over.
  4. Once all the slices are cooked, drizzle over a little oil, squeeze over the lemon and sprinkle the mint on top. Serve hot.
