Strawberry Pavlova

This is a great dessert which is perfect for a dinner party as it really looks the business but is incredibly easy to make.

Strawberry Pavlova

Prep Time: 15 mins
Cook Time: 1 hour plus 30 mins cooling time
Serves: 6-8


  • 4 egg whites
  • 200g caster sugar
  • ¾ tsp cornflour
  • 1 tsp white wine vinegar
  • ½ tsp vanilla extract
  • 500ml double cream
  • 2 tbsp icing sugar
  • 1 vanilla pod – seeds only
  • 8 large English strawberries, chopped
  • A handful of blueberries


  1. Whisk the egg whites until stiff and then whisk in the sugar little by little until the meringue is nice and shiny.
  2. Whisk in the other ingredients until well combined.
  3. Spread the meringue carefully on some baking parchment in a round shape, ensuring the sides are higher than the centre.
  4. Bake for an hour at 140°C (gas mark 1), then allow to cool in the oven to prevent cracking.
  5. Meanwhile, whisk the cream with the icing sugar and vanilla until peaks form.
  6. Spread the mixture into the cooled meringue and then top with the fruit.
